I worked for about a year in the USDA dept Forest.
My task was to study and understand how the Canopy (tree vault) varied following a Wildfire. In that wonderful working interlude, surrounded by the "Ponderosa Pines" and the White-tailed deer, I had the opportunity to meet, live and share work and life experiences with the real Lumberjack of the Forests.
They are very unique people, shy and unwilling to open up.

It may seem absurd, but cooking that "exotic" meal for them allowed me to break into their hearts. A typical Italian bizarre idea that allowed me to become a friend and spend unforgettable days in their company. Often, during the suitable season, it is not uncommon to see pickups and backpacks full of deer antlers collected in the woods which are then resold for cutlery and other folkloristic works. I will never forget the characteristic smell of cream and strawberry given off by the resin of the Ponderosa Pines.
